3 Egg Ham & Cheese Omelet
INGREDIENTS
1 Onion
1 Bell Pepper
Cheese of your choice
Ham
3 Eggs
Butter
Salt & Pepper
PREPARATION
Dice the onion, bell pepper and ham
Grate the cheese(if using block cheese)
Whisk eggs together with a pinch of salt and pepper in bowl
Cook onions and bell pepper in a frying pan on medium to high heat until slightly softened.
Add ham to onion and pepper and cook until heated through-remove from pan and set aside
Heat pan to medium-low heat and add butter to coat pan
Add the egg mixture to pan and wait until the edges start to solidify, swirl the pan around until most liquid has turned solid
Add the ham/pepper/onion mixture to eggs and push to one side
Add cheese
Fold over the egg, let cheese melt to desired consistency
